Egg Yolk Powder is produced by separating, pasteurising and spray drying egg yolk to form a dry powder. Egg yolk powder is a dairy free, vegetarian suitable source of protein. It is rich in lecithin; lecithin is a good emulsifier and is rich in choline.

Food uses Egg yolk powder can be used in baking, mayonnaise, dressings, pasta and confectionary product. Health benefits The yolk of an egg contains a higher proportion of the egg's vitamins than the egg white, particularly vitamin B6, vitamin B12, folic acid, pantothenic acid, vitamin A, vitamin D and vitamin K. The egg yolk is higher in fat than the egg white, making it a good source of protein for keto diets.  Although in the past, there has been concern about the cholesterol content in eggs, it is now widely accepted that dietary cholesterol intake has little to no effect on blood cholesterol levels in most people.
