Fructose is a simple sugar and one of the 3 most important blood sugars along with sucrose and glucose. It is found natuarally in many foods including, honey, fruit, berries, some root vegetables such as beets, sweet potatoes, parsnips and onions. It is also derived from the digestion of sucrose and is believed to be the sweetest natuarally occurring sugar, estimated to be twice as sweet as sucrose.

Fructose is recommended for use by diabetics due to its very low glycenic index which is considerably lower than both sucrose and glucose.

Pure fructose has a sweet taste almost identical to cane sugar but has a fruity aroma.
