Inulin is a fibre naturally found in a wide variety of plants such as wheat, onion, bananas, garlic, asparagus and chicory. It has a neutral, slightly sweet taste, making it an excellent bulking agent for developing products with reduced fat and sugar. Inulin has been used to replace fat in table spreads, baked goods, fillings, dairy products, frozen desserts and dressings —this is because its crystals interact to form a smooth creamy texture to provide a fat-like mouthfeel.
Inulin has roughly half the energy as flour or sugar, making it ideal for energy reduction. It also balances out high-intensity sweeteners like aspartame and acesulfame k and can enhance fruit flavours and mask undesirable aftertastes. Inulin can also be used for fibre fortification, to enable health and nutrition claims to be made, without contributing viscosity.
